Back to School Essentials

We started back to school 3 weeks ago and it’s been a whirlwind. Getting everyone up and moving in the mornings, hurrying home to get in some play time with mommy, cooking dinner, then getting ready for bed, and some adult time each night is exhausting! But I love my job, the kids love their school, and all is well. I wanted to share a few of the items that keep us functioning smoothly and some favorite go-to meals if you are in the same boat we are this time of year-tired! :)

Go-to Meals

Pork chops and Veggies-super simple, minimal prep, and delicious!

Chicken Noodle Soup Casserole-yummy and makes great leftovers for lunch

Shrimp Scampi-a staple in our house. Light, tasty, and only takes 15 minutes to make. 8393b1db9532b2f6fb24a9947fc77a92Chicken and Rice-I simplify this one. Saute your veggies and chicken in olive oil. Once those are cooked add in chicken broth and bring to a boil. Add in minute rice {I usually make 3 cups which is plenty for dinner and leaves enough for leftovers for lunch} and turn off heat. Let sit for 5 minutes and it’s ready!

I love the bright colors and large size of the labels. They make it easy for the teachers in his room to find his bottles quickly. And they’re cute:)

DSC_1879_FotorI try to workout 3 nights a week after the kids are in bed {around 7:30-8:00}. This app has been my go-to since around April and I am in better shape than I’ve been in years. It’s only 28 minutes per workout and they will kick your booty!
