Chicken Enchiladas + Michelob Ultra Cider

Now that we’re well into the heat of the summer, I’ve got a super yummy recipe to share and a great, refreshing drink to go right alongside.  Chicken Enchiladas and Michelob Ultra Light Cider. Mmmmm.  I meshed a few different recipes together to come up with this surprisingly light enchilada recipe. Ingredients {this served two people but you could obviously increase or decrease}:

  • 4 small tortillas
  • 1 cup of cheese
  • 1 can of enchilada sauce
  • pinch of chili powder
  • pinch of cayenne pepper
  • 2 chicken breasts, cubed and cooked
  • 1/3 cup of milk
  • 2 T. butter
  • 1 T. flour
  • 1 small onion
  • 1 small green pepper

I first seasoned {with salt and pepper}, cut up, and cooked the chicken breasts and set aside.  In a separate pan, I used a tablespoon of butter and sautéed the chopped onion and green pepper.  In a small bowl, I mixed about 1/3 of the can of enchilada sauce with 1/4 c. of cheese.  Then I added the chicken, onion, and pepper to the mixture.  Spoon some of this mixture into each tortilla and lay them in a greased baking dish, seam side down.  Bake for 10 minutes in a preheated 350 degree oven. While that is baking, in a small sauce pan, melt the other tablespoon of butter and whisk in the tablespoon of flour.  Add in the milk and continue whisking.  Cook over medium-low heat until thick and then add another 1/3 of the can of enchilada sauce.  I sprinkled in some chili powder and cayenne pepper for a little extra heat.  Take the enchiladas out of the oven and pour the sauce over the enchiladas.  Sprinkle with the rest of the cheese and bake for another 10 minutes, until the cheese is melted. We do like to have an idea of about how many calories are in our meals so to save any of you who do the same some math, they were about 575 calories for two enchiladas.  We also found the perfect drink to have alongside the enchiladas: Michelob Ultra Light Cider.  It is such a refreshing light beer, perfect for summer.  It has a slightly sweet apple taste that’s just the right amount.  It’s actually naturally sweetened from hand-picked apples.  How’s that for fresh?
