Summer Berry Dessert

I wish I could come up with some clever name for this divine dessert, but that’s all I’ve got. I made this for the first time a few weeks ago and it was a huge hit. I made it again last weekend and it was another success so I figured it was time I shared it here on the blog.
It’s the perfect summer dessert. A little sweet, nice and cool, and delish.
Ingredients for crust:
- graham crackers {about 13-14}
- 7 T. butter
- 1 1/2 tsp. cinnamon
- 1/2 c. sugar
Ingredients for topping:
- 2 packages light cream cheese
- 16 oz. light cool whip
- 1 tsp. vanilla
- 1 large package frozen berries {I used a mixture of strawberries, raspberries, blackberries, and blueberries}
- 1/2 c. sugar
To make the crust, I used this recipe. It’s very simple. Melt the butter, crush up the graham crackers, mix it all together and press it into the bottom of the dish. Bake for 7-9 minutes at 375 degrees. Be careful to not let it get overcooked or it will become hard. A little gooeyness is good:) I could eat the crust alone, it’s that good.
To make the topping, beat together cream cheese and sugar until creamy and thick. Then add vanilla and beat again to mix. Fold in Cool Whip. I usually beat it again just to make sure it is smooth and evenly mixed together. Layer a small amount of the whipped mixture over the graham cracker crust. Then a layer of berries. Pile the rest of the whipped mixture on top and then finish it off with the rest of your berries.
Good luck not eating it all in one sitting:)

How hard would it be to make 1/2 of it?? Or could I make the full thing and freeze half.?????
I’m not sure about freezing it {just don’t know about the crust?}, but you could definitely half the recipe!
