Easy, healthy chicken fried rice

I don’t post recipes too often, but when I find a good one, I have to share. I actually originally found this recipe on Pinterest a month or two ago and we’ve added to it to our rotation of favorites. If you want exact measurements, head over to Stick a Fork in It.  I’ll admit, I’m more of a Rachel Ray cook-eye ball it, and eat:) I rarely measure ingredients, which is nice for me because I don’t have to look recipes up after I’ve made them, but not good when I’m sharing with others because I don’t know the measurements:) I’ll give you my simple version below.

First off, ingredients:

  • 1 bag frozen mixed vegetables
  • Stir-fry sauce {I used Kikkoman brand, but any will do}
  • 3 eggs
  • Uncle Ben’s Whole Grain Brown Rice-Ready Made
  • Chicken-I typically only use 1 chicken breast for the whole pan, but you could do two if you want
  • egg rolls {as a side dish-optional}

Start by scrambling your eggs in a large skillet.

Remove eggs from pan and set aside.  Then brown the chicken in about a tablespoon of olive oil {I cooked this whole meal over medium heat}.

Push chicken to the side of the skillet and add in the frozen veggies.  I had the steamable bag, but still threw them in frozen.

Stir the ready-made rice into the skillet and heat through {just takes a couple minutes}.

Then lastly, add the eggs back in and pour in some stir-fry sauce, just enough to coat the dish.

The last step is to eat:)

I baked a few egg rolls in the oven to go on the side.  We try to be knowledgeable about the calories we take in for our meals, so we added this up and figured it to be about 350 calories per serving {3 even servings}.  For us, this makes about 3 uneven servings: one larger serving for Mike, and two smaller ones for me-one for dinner and one for lunch the next day:)  Does anyone else love leftovers as much as I do?
