Mexican Stuffed Peppers

After posting about our budget last week, I had some requests for recipes and meal planning ideas.  Today, I thought I would share a simple, yummy, inexpensive meal that we love at our house: stuffed peppers.  We love Mexican food, and have some variation about once a week {it’s cheap and delish}, so I make these Mexican-style, but you can change this recipe a ton of different ways to suit your tastes {Italian, Greek, etc.}.


  • 1 lb. ground beef
  • 1/2 c. fiesta blend shredded cheese
  • 1/2 c. salsa
  • 2 T. water
  • 1 packet taco seasoning
  • 1 bell pepper per person
  • 1/2 c. instant white rice

Preheat your oven to start.  If you like your peppers crunchy, preheat to 400 and bake for about 7-10 minutes.  If you like them softer, preheat to 350 and bake for about 15-20 minutes.

Start preparing your peppers by browning the meat.  I was lucky enough to marry a hot hunter, so we use ground venison {super lean} in all of our ground beef dishes.  Feel free to use turkey, beef, whatever you like.

While the meat is browning, make your rice {follow directions on the box} in another pot.  Once both are ready, get a medium size bowl to mix your stuffing in.  Put the meat, taco seasoning, and salsa in a bowl and stir together.

Add your rice to this mixture.

Then cut your peppers in half, removing seeds and core, and lay them out on your baking sheet.

Spoon a good amount of your mixture into the peppers.  With one pound of meat, I perfectly filled two whole large bell peppers so adjust amounts as needed for your family.

Sprinkle a tablespoon or two of cheese on top of each pepper.

Then bake and enjoy!

We like this meal because we typically have most of the ingredients on hand, but even if you don’t, everything in this recipe is inexpensive {rice, taco seasoning, etc.}.  This is a budget-conscious meal.  It’s filling, delicious, and healthy!  For one whole pepper {two pieces as pictured above}, it’s around 500 calories.  I chose to eat one half and a large piece of cake last night…my perfect meal.  A little meat and a lot of dessert:)
